Just Beet It!

Your thinking, it’s “beat” not “beet”… but how wrong you are. I am seriously talking about “beet(s).” Have you had any lately? I’m sure the last memory you have of beets, is from when you were 6 and your parent or guardian was forcing them down your throat.

But now is the time to replace that un-fond memory, and to do that I suggest you find the nearest Mixt Greens, Trader Joe’s, or Whole Foods and buy yourself some grilled red beets. Not only do they taste delicious, but they are great for you.

According to whfoods.com, beets are an excellent source of the B vitamin, folate, and a very good source of manganese and potassium. Beets are also a good source of dietary fiber, vitamin C, magnesium, iron, copper and phosphorus.

If you are too chicken to just try them alone, I suggest you get a salad that has grilled red beets, goat cheese, and candied walnuts paired with balsamic vinaigrette. Delicious.

Now, Just Beet It!

  1. I think the last time I had beets was during the Super Bowl in 97. I have no idea why my mom thought beets would be a good Super Bowl food, but she made them and forced them down my throat. They were OK...
